Stuck on Food: Baked Eggs with Broccoli and Ham

I don’t know how else to break this to you, but this was an epic FAIL! I tried a new recipe this week, which I will now call broccoli with a splash of eggs and ham. I could not be more disappointed in a new dish!

Back story: I pinned a few recipes that looked oh so yummy – masterpieces of color and health! They all looked simple enough, and most did not have a ton of ingredients. Also, my doctor has encouraged me to be more gluten conscious. This recipe did not have a drop of gluten either – SOLD. I was ready to give it a go!

Ingredients I used:

  • 1 package of frozen Broccoli
  • 1 package of ham (small cubes)
  • 5 eggs
  • ½ tablespoon of butter (melted)
  • ½ cup of milk
  • ½ cup of cheddar cheese
  • ¼ cup of mozzarella cheese
  • Sprinkle of salt

I whipped together the milk, eggs, butter, and salt together first. Easy!  I sprayed my pan with Pam so nothing would stick, and then sprinkled the ham and broccoli in the bottom of my pan. Then I poured the mixture in, and topped with the cheese. It looked scrumptious! Put it in the over at 350 for 45 minutes.

Once I pulled this out the first time, I discovered problem one – the pan. I should have used a pan that was not as deep. As I stuck my fork in the middle to see if it came out clean, you will notice the HUGE hole (see pics) of uncooked eggs.

So, still believing in this trial recipe, I put some more cheese over the whole I had just made, and put it back in until it was done (roughly another 30 minutes).

Now, to the first bite.

HORRID! It all tasted like cooked broccoli. You couldn’t even really taste the cheese, or eggs, or meat. Just cooked, wet broccoli.  Not to mention, then the reeking smell of broccoli was all over  my condo…ewww!

Totally grossed out here. Needless to say, the beautiful dish went into the trash immediately, and every candle I had was burning.

Where did I go wrong?
